My husband and I came to Steamboat and our first meal was at Bistro CV. It was AMAZING!! From the tartare to the mussels and the halibut was out of this world. A wide variety of great wines by the glass!!! (so huge) dont miss out on going!! Our waiter was incredible as well!!

My husband and went skiing for a long weekend, from Naples, Fl and had a nice dinner out at Bistro CV and wow! We were very impressed right from the door! Cozy and classy place! The food was 5star and unique! I feel bad for not doing this review when we were there in March, as I have now forgotten the name of our server,(maybe Brandon) who was great! They pamper you, as the place isn't big and they spend time with you,if you desire this type of dinner! If you don't, you can be out in a fashionable time also. It is a casual classy ski town restaurant. You can wear jeans but have the respect and dress them up with some nice shoes and shirt. The Salmon Tartare was the best I have had and my husband and I eat in fine restaurants often. The organic vodka (from San Francisco) martini's with stuffed olives were yummy! I had the duck that day, the menu changes daily, loved it! They get all the food locally or organic, when they can. The two guys who own/run the place are there behind the line cooking in front of you, with the open kitchen, and they make a good team. Book your reservation, you will not be disappointed!

Bistro CV provides and elegant, but not particularly pretentious setting. There food is unique, fresh and accommodates most palates. Their bar is well stocked with inexpensive wines, and the best "Spruce" martini I have ever had. The happy hour is a great start for someone looking to check out this new place. The pot pie is my guy's favorite. Mine: the wine, the oysters, the atmosphere, and the approach. Thanks for bringing your attitudes and experience to Routt County. JAM

Relaxing,casual with a sophisticated attitude. Service is personal and comfortable-food is unique,tasteful and just the right portions.An ambience that allows a night for 2 or a larger group of friends-don't miss a night here!!!

Wonderful menu short and sweet, great ambiance and wine selection. These guys have taken organic cooking to a whole new level. If you want to step away from restaurants that serve portions so large they look like you are at family style dining and taste food the way it was meant to be cooked then a visit to The Bistro CV in Steamboat will not disappoint.
